Product Description
Icelandic flounder grows in cold, clean waters, giving a mild, sweet flavour and fine, tender white flesh with moderate fat and no strong “fishy” or muddy taste. The fillets or steaks are usually trimmed with minimal bones, so each bite is mostly pure fish meat, making it very family-friendly and suitable for both adults and kids. The 400g pack typically contains several portions, convenient for cooking a full family meal at once or splitting into two lighter meals, and works beautifully with simple seasonings like salt, pepper and a squeeze of lemon.
Recommended Recipe : Pan-Seared Flounder with Lemon Butter
Ingredients:
400g Icelandic flounder fillet/steaks (thawed and patted dry)
Salt, to taste
Black pepper, to taste
A little plain flour (for light dusting, optional)
20g butter
A little olive oil
Juice of 1/2 lemon, plus a few lemon slices for garnish
1–2 cloves garlic, lightly crushed (optional)
A little chopped parsley or dried herbs (optional)
Method:
Thaw the flounder completely and pat dry. Season both sides with salt and black pepper, and lightly dust with flour if you want a slightly crisp surface.
Heat olive oil and half of the butter in a pan over medium heat. Add the garlic if using and sauté briefly, then place the flounder pieces in the pan. Pan-sear for about 3–4 minutes per side until lightly golden and the flesh turns opaque and flakes easily with a fork.
Transfer the fish to a serving plate. Turn the heat to low, add the remaining butter and lemon juice to the same pan and cook until just foamy. Pour the lemon butter sauce over the fish, sprinkle with chopped parsley or herbs, and serve with rice, mashed potatoes or simple sautéed vegetables.
