Ingredients: 230 g thin‑cut wagyu striploin, sea salt, freshly ground black pepper, a small knob of butter, 1 lightly crushed garlic clove (optional).

Method:

  1. Bring the steak to room temperature for 15–20 minutes, pat dry and season lightly with salt and pepper.

  2. Heat a pan over medium‑high heat; add very little or no oil, then sear the steak for about 30–40 seconds per side until the surface browns and the fat starts to melt.
