Ingredients
120g Japanese A5 wagyu belly cubes
1/2 onion, sliced
1–2 cloves garlic, sliced
1.5 tbsp soy sauce
1 tbsp mirin
1 tbsp sake (or water)
1 tsp sugar
1–2 bowls steamed rice
Chopped spring onion and sesame seeds for garnish
Method
Let the wagyu cubes come slightly to room temperature and pat dry with kitchen paper.
In a small bowl, mix soy sauce, mirin, sake and sugar to make the sauce.
Heat a little oil in a pan, sauté garlic and onion until soft and lightly caramelised.
Turn to high heat, add wagyu cubes and stir‑fry until just browned on the outside, then pour in the sauce and toss quickly until slightly reduced, keeping the meat medium to medium‑rare.
Spoon the wagyu and sauce over hot steamed rice, top with spring onion and sesame seeds, and enjoy a rich, flavour‑packed wagyu donburi at home.
